This recipe is part of a series of caveman diet recipes that you can use to prepare your own Caveman Diet Plan.
Zucchini, Broccoli and Pepper Soup (Serves 4)
- 4 zucchinis
- 1 medium broccoli
- Half a red pepper
- 2 red onions
- Pressed garlic (1 or 2 cloves depending on taste)
- Olive oil
Dice the red onions and shallow fry in the olive oil along with the pressed garlic in a large saucepan. While the onions are frying, chop the zucchinis, broccoli and red pepper into small pieces. Once the onions have softened, pour the chopped vegetables into the saucepan and pour in two cups of boiling water (don’t be tempted to add more water than this as zucchinis are very watery). Cover the saucepan and let it simmer for about half an hour, stirring occasionally.
Add salt according to taste and then, using a hand blender, blend the boiled vegetables until the mixture becomes smooth. This should take less than two minutes.
Try serving them with meatballs!
