Ingredients
- 1 tbsp olive oil
- 2 tbsp lemon juice
- 4 tbsp dill (finely chopped)
- 2 tbsp mayonnaise
- 2 rashes of bacon (diced using meat only)
- 2/3 cup sweet potato (diced)
- 2 eggs
Preparation
Boil the eggs for 4 to 6 minutes. Peel and dice them.
Boil the sweet potato until cooked through (about 4 to 5 minutes)
Place a frying pan on medium to high heat, add the olive oil and bacon. Fry until browned and slightly crunchy.
In a small bowl, mix the dill, mayonnaise and lemon juice.
Place the eggs, sweet potato, bacon and mayonnaise sauce in a medium size serving bowl and mix before serving.
